One of the things I do with busy teens as I never know who is home for dinner, we take the frozen individual chicken fingers. I take them straight from the freezer, and put them in a saute pan with olive oil on the bottom of the pan, I sprinkle them with Mrs. Dash, gives a lot of variety, flip them, they get nice and browned, look like they were on the grill, and they are really moist! We cut up fresh veggies in the frig so we do that too, or a fruit salad(just grapes, strawberries) or watermelon too. Most of us don't really like carbs/starches, except some rice, but usually our meals are a meat and veggies or a meat and fruit. or salad. Hope that helps. I also like the tiny machine the Express 101, I will put in some fresh veggies, mushrooms, red pepper, and then mix up eggs/skimmilk, and a tiny bit of tobasco sause, and make some cute little omelets in there. No cheese, as we don't really like cheese. That is fast in the am too. And sometimes for dinner! I also use my george forman grill, I love having fresh veggies, zuchinini, squash, red onion, whatever you like, toss in a tiny bit of olive oil and fresh garlic and GRILL! I even make foil packets and put on the grill outside and eat leftovers for a few days! I love them! Hope that is helpful. Can't wait to hear more of your ideas too!

well i made the soup in the sexy in6 book over the weekend in the slow cooker.
really good and so easy! throw in all in away leave it to cook.
I also have the berry smoothie everyday now. I'm hooked my husband is also having them. I never made it this morning and he was asking where the smoothies are! lol
Ive always wanted to try making frittatas so that will be my next cooking adventure! thanks everyone for the tips. It's definitely paying off. ;)

I like to cut up tomatoes, mushrooms, other veggies, grate cheese and have it all in little baggies, then every morning, fry a couple of eggs, add your pre-cut ingredients and you have a healthy 3 minute breakfast (instead of having to prep them every day). Then add some hot sauce (adds flavor to everything).

Has anyone tried cooking with a slow cooker? You can cook some great stews and soups perfect for the cold weather. It's easy, your food is cooking while you're out doing your errands.

Many of Tracey's recipes in her book are very very easy to do. Yesterday for breakfast I made extra of the berry smoothie and refrigerated it. It was a great snack today and even had more flavor than yesterday. I also found a good vinaigrette recipe and now keep that handy for the salads, like spinach with some cherry tomatoes and carrots, or cucumber salad with red onion, carrots, tomatoes, green peppers, (I put so many vegetables in it I can't remember what all I used). It was very yummy. Frittatas are always easy and you can put anything in there for breakfast, lunch, or dinner. Last night I made shrimp and pasta with sun-dried tomatoes and capers. Heat a pan with a little evoo, pour in some white wine to partly cover the sun-dried tomatoes, capers and shrimp, you can add some broccoli or other vegetable if you wish. Simmer it for a few minutes until reduced a bit. Super easy and delicious.
