Carrot Pinapple Muffins

Combine 1/4 cup honey, 1/2 cup oil and 2 large eggs beaten.
Combine 1-1/2 whole wheat flour, 2 tsp baking powder, 1 tsp baking soda and 1 tsp cinnamon.
Now add wet ingredients to dry and combine along with 1 cup grated carrots, 1 cup unsweetened crushed pineapples(drained) and 1/4 cup raisins. Cook at 375F for 15-20 minutes. I divided up into 12 muffins portions.

I took this one from one of the Biggest Loser cookbooks and adapted it just a tiny bit. It's really good and fills me up, which I was surprised.

1 chicken breast, 1 Tbs Worcestershire, 1/2 Tbs. Tabasco, 1/2 Tbs lemon juice (fresh). Put in baggie and marinate at least 1 hour. I then put it in a Ziploc steam bag and cooked it for just 3 minutes or so until done. I then cut it up and divided it into 2 big Ziploc bags. The actual recipe calls for more chicken but I don't like much meat so you can do what you want, just adjust other ingredients accordingly.
To each bag of chicken, I added half a bag of prepared salad greens and then however much I wanted of bell pepper strips, cucumber slices, radishes, and grated carrots.
Before eating, I added light balsamic vinagrette to the bag and shook it up.

Not a recipe but I wanted to share that I made the chicken salad recipe from Tracey's book and it was really good. I was unsure about the Greek yogurt/sour cream sauce instead of mayo but I enjoyed it and it was perfect to go on lettuce instead of bread. I wasn't even able to eat the whole thing so that was a good sign, right?

It must be in the Super Fit Mama book--I couldn't remember which book it was, sorry!
